Fresh Strawberries spell Love just by their shape and color!
Our first Valentine's Cheesecake choice is a graham wafer based crust
with creamy cheesecake topped with fresh strawberries.
No baking involved, just chill it in the refrigerator.
Top with fresh fruit just before serving.
Creamy Chilled Cheesecake with Fresh Strawberries
1 cup graham cracker crumbs
1/4 cup sugar
1/4 cup margarine, melted
1 envelope unflavored gelatin
1/4 cup cold water
8 oz cream cheese, softened
1/2 cup sugar
3/4 cup milk
1/4 cup lemon juice
1 cup whipping cream, whipped
Strawberry Halves, as many as you like
1. Combine crumbs, sugar, and margarine; press onto bottom of 9-inch spring-form pan.
2. Soften gelatin in water; stir over low heat until dissolved.
3. Combine cream cheese and sugar, at medium speed on electric mixer until well blended.
4. Chill until slightly thickened; fold in whipped cream.
5. Pour over crust; chill until firm.
6. Top with strawberries before serving.
Arrange the strawberries whole or halved evenly over top, heaped in the middle or even arranged in a heart shape.
Best Pennywise Tip: Use frozen strawberries if you need to, and if the fresh strawberries aren’t too flavorful on Valentine’s Day, sprinkle them with a bit of sugar and keep chilled in a bowl in the refrigerator until serving time, stirring gently as the sugar dissolves and the juices start flowing.
Strawberries dipped in melted chocolate? Yes, that’s another great topping for this Valentines Cheesecake – just make sure there’s one for each person, unless, of course, you plan to nibble them one at a time with your sweetheart!
