These next 3 microwave recipes make inexpensive and quick gifts.

Microwave Cabbage Relish

2 1/2 cups shredded cabbage, red or green

3/4 cup chopped red onion

1/2 chopped green pepper

1 cup white vinegar

2/3 cup sugar

2 tsp salt

1/2 tsp celery seed

1/2 tsp mustard seed

1/4 tsp ground tumeric

Put cabbage, red onion, and green pepper into medium bowl and mix till well combined.

Divide mixture equally between two pint jars (must be sterilized) and set aside.

In microwave dish that holds 4 cups, combine all the remaining ingredients.

Microwave on High for 2 to 4 minutes, or until boiling. Stir after half time to dissolve sugar and salt.

Pour over cabbage mix in the two jars; cover.

Store in refrigerator for 1 week before serving.

Store in refrigerator for NO more than 1 month.

Best Pennywise Tip: When you are shredding cabbage for a salad or casserole, shred 2 1/2 cups extra for this relish. The relish is quickly made - and there is only 1 clean-up.




Microwave Flavoured Vinegars

Best Pennywise Tip: Flavours will be released more quickly if you microwave until warm to the touch.

NEVER use chipped or flawed bottles. Use ONLY clean glass bottles.

Microwave Onion-Garlic Vinegar

2 cloves garlic, peeled

2 pearl onions, peeled

1 to 2 cups white or cider vinegar

6 inch long wooden skewer

On wooden skewer, put garlic and onions alternatively.

Drop into bottle.

Add vinegar. Microwave uncovered at High for 30 seconds to 1 1/2 minutes - until bottle is just warm to the touch. Check every 30 seconds.

Cap and let stand in a cool, dark place for 2 weeks before using.

After opening, store in refrigerator and use within 2 months.

Makes 1 to 2 cups.




Microwave Herb Vinegar

1 or more sprig fresh mint, tarragon or oregano

1 to 2 cups white or cider vinegar

Add one or more sprig into a clean glass bottle.

Add vinegar. Microwave uncovered at High for 30 seconds to 1 1/2 minutes - until bottle is just warm to the touch. Check every 30 seconds.

Cap and let stand in a cool, dark place for 2 weeks before using.

After opening, store in refrigerator and use within 2 months.

Makes 1 to 2 cups.

Best Pennywise Tip: Mint flavoured Vinegar is good in Fruit Salad.

Herb vinegars may replace white or cider vinegar in any recipe.




These next 3 microwave recipes make inexpensive and quick snacks for family or company.

Microwave Stuffed Potato Skins

2 large baking potatoes, microwaved until done. Let stand 5 minutes to cool .

1 slice bacon or 1 Tbs bacon bits

1/4 tsp salt

1/8 tsp pepper

1/4 cup sour cream

1/2 cup shredded cheese, Cheddar or your choice

1 Tsp sliced green onion or chopped chives

Microwave potatoes until done. Let stand 5 minutes to cool.

In meantime, place bacon between paper towels and microwave on High for 30 to 60 seconds until crisp. Cool then crumble and set aside.

Slice each potato lengthwise in half, then crosswise in half. Scoop out potato centres until 1/4 inch is left on the skins.

Arrange on serving plate. Sprinkle with salt and pepper.

Spread thin coat of sour cream in each potato skin shell.

Sprinkle each one with cheese, green onion or chives and crumbled bacon.

Microwave at Medium (50 %) for 2 1/2 to 4 minutes until cheese melts.




Microwave Quick Nachos

For approximately 24 tortilla chips:

Toss in bowl or plastic bag:

1 cup shredded cheese, Cheddar, Monteray Jack or Colby

with:

1/4 tsp chili powder

1/8 tsp cumin

Toss until cheese is evenly coated.

Arrange chips on 9 to 12 inch serving dish in one layer.

Sprinkle cheese mix over chips.

Microwave on Medium for 2 to 5 minutes or until cheese is melted.

Serves 4 (or 1 husband during Grey Cup or Super Bowl)

Best Pennywise Tip:

Before microwaving: Top with chopped onions or black or green olives. Spread nachos with refried beans before adding cheese.

After microwaving: Top with chopped tomato, shredded lettuce and taco sauce.

Use smaller size dishes for individual servings.




Microwave Chocolate Syrup

1/3 cup instant chocolate-flavoured drink mix

1/4 cup light or dark corn syrup

2 Tbs water

In 4 cup measure combine all ingredients.

Microwave on High for 45 seconds to 1 1/2 minutes, or until boiling.

Boil 1 minute - watching closely to avoid boiling over.

Cool and refrigerate.

Mixture thickens as it cools.

Store in jar in refrigerator - use within 1 month.

Serve over ice-cream or use in milk shakes or hot chocolate.

Makes 1/2 cup.




Microwave Milk Shake - Serves 1

2 or 3 scoops vanilla, chocolate or chocolate chip ice cream

2 Tbs milk

2 Tbs Chocolate Syrup

Place all ingredients in a 12 oz glass.

Microwave at 50% Power or Medium for 30 to 45 seconds, just until stir-able.

If additional softening is needed, microwave while stirring every 15 seconds until desired consistency.

Microwave Hot Chocolate - Serves 1

3/4 cup milk

2 Tbs Chocolate Syrup

Put milk in microwave safe mug.

Blend in Chocolate Syrup.

Microwave in High for 1 to 2 1/4 minutes or until hot to 170 F.

Best Pennywise Tip: Top with miniature marshmallows, mini chocolate chips, ice cream, whipped topping or add a candy cane for a stir stick. Float an mint flavoured chocolate after dinner mint on top or stir in mint flavoured chocolate chips.
