5 Christmas Recipes

2 Breads for easy snacking, desserts or breakfast.

Applesauce/Banana Bread


4 ripe bananas
1 cup sugar
¾ cup applesauce
2 eggs
2 cups bread flour
½ teaspoon salt
1 teaspoon vanilla


  1. Preheat the oven to 350 degrees and grease a 9” x 5” loaf pan.
  2. In a large bowl, slice the bananas and use an electric mixer to mash.
  3. Add sugar and blend.
  4. Let mixture stand for 15 minutes.
  5. Add applesauce and eggs and mix well.
  6. Blend in the remaining ingredients.
  7. Pour into the greased loaf pan and bake for 55 minutes.
  8. Remove from the oven and let stand again for 10 to 15 minutes.
  9. Transfer to a wire rack to cool completely.

The applesauce cuts down on fat in the recipe and should help to make this bread moist enough to freeze well.

Reindeer Bread


1/2 cup butter, softened
1 cup white sugar
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
3/4 cup pumpkin puree
6 ounces semi-sweet chocolate chips
1 cup chopped pecans, divided
1/4 cup confectioners' sugar
2 tablespoons heavy cream
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon


  1. Preheat the oven to 350 degrees. 
  2. Grease and flour a 9x5 inch loaf pan.
  3. Cream butter and sugar until fluffy.
  4. Add one egg at a time mix well after each addition. 
  5. In a separate bowl blend together flour, baking soda, salt, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg and the ginger. 
  6. Slowly stir 1/3 of the flour mixture into the sugar mixture. 
  7. Then stir 1/3 of the pumpkin into the sugar mixture. 
  8. Next stir in 1/3 of the flour and then the rest of the pumpkin.
  9. Finally stir in the last of the flour mixture. 
  10. Gently fold in chocolate chips and 3/4 cup of pecans. 
  11. Pour mixture into loaf pan and sprinkle with remaining pecans.
  12. Bake for one hour until a knife inserted in the middle of the loaf comes out clean. Cool completely. 

For the icing:

  1. Stir together the confectioners' sugar and heavy cream.
  2. Add cinnamon and nutmeg and stir until smooth.
  3. Drizzle icing over bread loaf when completely cooled.

Enough to feed to all the reindeer that land on your roof...or just to your dears!

2 Breakfasts for hungry crowds

Breakfast Casserole


1 package sausage
2 cups shredded cheddar cheese
9 eggs, beaten
2 cans refrigerated crescent rolls


  1. Preheat the oven to 350 degrees.
  2. Crumble and brown the entire package of sausage and pour off any fat.
  3. Coat a 9” x 13” baking dish with a non-stick spray and line it with one package of the crescent rolls.
  4. Put the cooked sausage on top of the rolls and top with the cheese.
  5. Pour in the eggs and top with the second package of crescent rolls.
  6. Bake 35 minutes or until the top is golden brown.   

Serve warm with a buttery maple syrup.

Yuletide Breakfast In a Package


1 pound bulk pork sausage, cooked and crumbled
1 cup shredded Swiss cheese
1 cup shredded Cheddar cheese
2 (9 inch) unbaked pastry shells
6 eggs, lightly beaten
1 cup milk
1/2 cup chopped onion
1/3 cup chopped sweet red pepper
1/3 cup chopped green pepper


  1. Preheat oven to 350 degrees.
  2. Place cooked crumbled sausage in a large mixing bowl.
  3. Fold in both cheeses. 
  4. Place one pie shell in a pie plate.  Place half the sausage mixture in the pie shell.
  5. Place the other pie shell in a pie plate.  Pour rest of the sausage mixture in the shell.  
  6. Whisk eggs, milk, onion and both peppers in a separate bowl, making sure eggs are blended in well. 
  7. Pour half the egg mixture over the first pie shell and mixture.  Pour the rest of the egg mixture over the other pie shell. 
  8. Bake one hour or until knife inserted in the middle comes out clean. 

Let stand 10 minutes before cutting and serving.

5 Christmas Recipes - 1 Quick Tuna Casserole for easy lunches or dinners

20 Minute Tuna Casserole


8 ounces rotini pasta
2 cans cream of mushroom soup
12 ounces white albacore tuna in water
3 cups shredded white cheddar cheese
1 cup bread crumbs


  1. Preheat the oven to 325 degrees.
  2. Prepare pasta according to the box directions.Drain and pour into a 9" x 13" baking dish.
  3. While pasta cooks, mix together the soup, tuna, and 2 cups of cheese.
  4. Add the tuna mixture and blend with the pasta.
  5. Cover with the rest of the cheese and top with the breadcrumbs.
  6. Place in pre-heated oven and bake for 20 minutes.

Serve with a side salad, sliced fresh tomatoes, or quick to prepare frozen vegetables.

We've been known to add canned chunk tomatoes to this recipe before baking. Then just serve it with a side of coleslaw, green salad, or a raw vegetable platter.
