Cabbage Chili Soup

Cabbage Chili Soup - another really easy soup to make in your slow cooker. If you are really in a hurry, this Cabbage Chili Soup cooks up quickly on the stove top, too.

Add some Basic Oven Meatballs if you want a more hearty meal but with the kidney beans you don't really have to add meat. Either way, it's delicious and economical.

With all these fresh vegetables and kidney beans, this is a really nutritious soup. Serve it with whole grain bread or rolls.

Cabbage Chili Soup

3 cups coarsely chopped cabbage

1 cup chopped onions

3 cups Healthy Choice tomato juice (or any reduced-sodium)

1 (10-1/2 oz) can Healthy Request Tomato Soup

10 oz kidney beans, rinsed and drained

2 tsp chili seasoning mix


In a slow cooker, combine cabbage, onion, tomato juice and tomato soup.

Add kidney beans and chili seasoning mix. Mix well to combine.

Cover and cook on LOW for 6-8 hours.

Stir well before serving.

No tomato soup or juice on hand? Use tomato paste or tomato sauce with additional water.

Or blend up some canned tomatoes. You could even chop up fresh tomatoes, especially handy if you have a bumper crop.

In fact, if you have a garden this is perfect for using up your cabbage and tomatoes.

This soup is delicious served with wholegrain bread or rolls. Sprinkle some grated cheddar cheese over the soup for additional color and flavor.

Personally, I, at least, double this recipe. It's a time and money saver then. I use a big Dutch Oven pot or a slow cooker. I add any excess water to the freezer containers with the beans. I want lots in the freezer.

I also do the same with chick peas(garbanzo beans)and pinto beans so I always have them on hand, too.

How To Cook Dry Kidney Beans:

For 2 cups of dry beans:

Bring 1 quart water to a rolling boil.

Quickly wash 2 cups kidney beans and add to the boiling water so slowly that the water does not lose it's boil.

When all the beans are added, reduce the heat immediately.

Do not add soda or oil.

Simmer with the lid on until beans are tender, adding more water as necessary. This could be 2 to 3 hours.

If there is excess water, simmer for a while with the lid off.
