Jam Crumb Cake

This delicious Jam Crumb Coffee Cake  (call it a Jam Crumb Cake if you want) served warm from the oven is topped with raspberry jam and a cinnamon crumb topping.  The jam and the crumbs all mix and mingle with the cake batter when it bakes so the top is lumpy and luscious.

No, coffee cakes don’t usually have coffee in them; it’s more they got the name because they are served with coffee. Since they often have a crumb or streusel topping they are often called Crumb Cakes, too.

Call these lovely treats what you will, Crumb Cakes and Coffee Cakes are just plain good to indulge in, especially half way through the morning when it’s time to take a brunch break.

The delicious topping is a wonderful replacement for icing or frosting that a regular dessert type cake would have – plus these are so quick and easy to prepare and bake, you just won’t miss the fuss and muss of having to cool a cake and spread icing.

Here’s one of our long time family favorites. I like to make extra topping cause we just like lots of crumbs but this is the basic recipe.

Jam Crumb Coffee Cake


¼ cup butter or margarine or shortening
1/3 cup sugar
1 tsp vanilla
1 egg, well-beaten
1 cup all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
1/3 tsp milk
½ cup thick berry jam, room temperature or slightly warmed


1.    Cream butter, sugar and vanilla together until soft and fluffy.
2.    Add egg, beating until smooth.
3.    Sift flour, baking powder and salt. (frankly I never do but judge by the quality of your flour)
4.    Add creamed mixture alternatively with the milk.
5.    Pour into a greased and floured 8 inch round cake pan.
6.    Spread warmed and softened jam over the batter.
7.    Sprinkle with Crumb topping (recipe follows)
8.    Bake in a moderate 375 F oven for 30 minutes.

Serve warm.

Spread the batter evenly. I wet the back of a soup spoon and use that to spread it.

Spread the jam evenly. I use the same wet, but rinsed, back of a soup spoon to spread it. Add more or less jam as you desire. Make sure it's warm to make it spread with ease.

Jam Crumb Cake - Crumb (Streusel) Topping

Stir together in a bowl with a fork or pastry cutter, cutting in the butter until fine crumbs.

2 tbsp sugar,
1/4 cup all-purpose flour,
½ tsp cinnamon
2 tbsp butter

Sprinkle over the jam for a topping.  The crumbs do not have to cover it completely. You’ll see some jam through the crumb layer.

It’s easy to increase this Crumb topping recipe by just adding a little more of each ingredient.

For instance, if you wanted a little bit more, you could divide each ingredient in half and add that amount.

2 tbsp + 1 tbsp sugar
1/4 cup  + 1/8 cup  cup all-purpose flour
1/2 tsp + 1/4 tsp cinnamon
2 tbsp + 1 tbsp butter

If you want a lot of streusel style crumb topping, double the recipe!

Sprinkle the Crumb (Streusel) Topping evenly over the jam.

Bake and enjoy your Jam Crumb Coffee Cake!

This is as nice on a cold winter’s morning with scrambled eggs or an omelette for breakfast or brunch as it is enjoyable to share sitting in the sunshine on your deck with the neighbors for brunch on a lazy Saturday morning.

I like it with some plain or vanilla yogurt spooned on top. Mmm…cold yoghurt, warm Jam Crumb Coffeecake, oh so fine.

But then, fresh warm applesauce would be just as delicious.

This recipe makes up quickly, serve while still warm from the oven…super great for impromptu invitations or unexpected guests.
