Meatball Sandwich Recipe

Meatball Sandwich or Sub - this recipe makes the meatballs from scratch and cooks them in your slow cooker or Crock Pot for convenience.

To speed things, if you have Basic Oven Meatballs in your freezer, this could be a really quick meal since you won't have to cook them in a slow cooker unless that is more convenient for you.

If you use the frozen ones, remember that simmering them in the sauce a bit longer will add more flavor to the sauce.

Try some of the variations, too. Being pennywise often means using what you have on hand or need to use up.

Meatball Sandwich Recipe

1 1/2 lb. hamburger

1 chopped onion

3/4 c. cracker crumbs

2 eggs

1 tsp. celery seed

Salt and pepper

1 jar spaghetti sauce

1/2 c. Parmesan cheese

Mix hamburger, onion, celery seed, eggs, cracker crumbs, Parmesan cheese and salt and pepper well.

Make into balls and put into flat baking pan.

Bake in oven at 450 degrees until brown.

Or, for the meatball part of the recipe substitute some Basic Oven Meatballs

Put into dutch oven or slow cooker/Crock Pot, pour spaghetti sauce over, simmer for about 1 hour with lid on.

Serve on buns.

If you want to make the sandwich using the frozen Basic Oven Meatballs, remember if they are not frozen or have been thawed you may not have to simmer them in the sauce for as long.

Suit it to your schedule. Also if they aren't frozen, you can heat them in the sauce quickly in the microwave or on the stove top.

Another variation, especially for a really quick meal, is to use a cream soup mix or canned soup, like mushroom, cream of celery or cheddar cheese in place of the spaghetti sauce.

This is so easy and quick that if you have fussy eaters in your family you can make a choice of sauces.

Of course, you can vary the cheese, too. Add chopped celery, mushrooms and more onions,too.

The Meatball Sandwich recipe is good for hot lunches or easy dinners. Add some vegetables or a salad and you have a complete meal.

For better nutrition, use whole grain buns.
